Veggie Curry

Veggie Curry

Serves 5

  • 1 can lite coconut milk
  • 1 zucchini
  • 1 large sweet potato
  • 1/2 red onion
  • 1 cup snap peas 
  • 1 bell pepper
  • 1/2 c walnuts
  • 14 oz water chestnuts
  • 2 T Curry Powder
  • 1 T turmeric

Add 1 C water to 1 can coconut milk, turmeric and curry powder.  Bring to a boil.  Saute zucchini and sweet potato, red onion, bell pepper and snap peas.  Add curry sauce and cook down 20 minutes.  Add water chestnuts in last 5 minutes.  Top with cilantro and walnuts.
